Fresh sea snails supplied whole in the shell, with the meat visible at the opening. The shells carry a warm brown, banded pattern and the meat is firm and springy.
Boil, steam or stir-fry, then pull the meat out with a pick. Serve with a dipping sauce or add to a seafood hot pot.
